Sup Kambing is the Indian version of Mutton Soup. "Kambing" is Malay for mutton or lamb. Sup Kambing is a spiced mutton stew that has been cooked for hours, with pieces of mutton and caramelised onions giving it a special flavour. The soup usually has a greenish or yellowish tinge due to the spices used. The meat should taste fresh and flavourful, not gamey and tasteless as is the case when frozen mutton is used. The soup should also be a little sweet from the ingredients, and not be full of monosodium glutamate (MSG).
