Fried Rice, as its name implies, consists of rice stir fried with a variety of ingredients. The main ingredients you would usually find in this Chinese Cuisine are diced Char Siew, eggs, shrimps. Green peas and shredded or dice chicken are also added. Some hawkers may add in crabmeat or Lap Cheong as well. A small amount of pepper, salt and oil is added during the stir fry process.

A good cook would be able to stir fry the rice until almost all the rice grains in the dish is coated with egg, making fried rice grains looks like miniature gold bars. The main ingredient rice, should use rice that are cooked and left dry by natural air, the previous day, so that the fried rice would not clump together or taste soggy.

Looking at the chef toss the rice would excite our visual senses and if the chef adds the right amount of salt, oil and pepper this Singapore Cuisine would be extremely tasty. Because you can just scoop the fried rice and put into the mouth without any additional procedure (like taking out bones, peeling the skin off etc etc), it is a popular dish with the busy Singaporeans.
