Curry Chicken Noodles, as its name depicts, consists of chicken noodles served with curry as a gravy. This is a dish that Singaporeans love to have at lunch or dinner.
There are three components to the dish served, curry, chicken and noodles. The curry is usually less viscous compared to the one that is cooked for curry puff filling. For the chicken, it is usually chicken that is cooked in curry gravy first. As for the noodles, there is not much variety. Only the thick yellow wheat noodle is available. This dish is served most of the time by Chinese hawkers and most likely they are sellers of chicken rice as well.
Usually the hawker would have a pot of chicken curry prepared. Upon order, the hawker would cook the noodles first and put it in the serving bowl. Then he will filled the whole serving bowl with a few pieces of chicken and curry gravy.
A good bowl of curry chicken noodles is one where firstly, the curry should not be too spicy or it would destroy the whole taste of the dish. The chicken should be very tender and has absorbed the curry very well. It should not be difficult to separate the chicken from its bone. If you do not want to waste the good curry, you can also purchase a white loaf of bread from nearby confectionary and eat it together with the good curry.
As for the noodle, most hawkers used machine-made noodles, so there is not much difference between stalls in this aspect. Combining all three main ingredients, this should be another gastronomic experience you would not soon forget.
